Harley Carbery was born in Victoria, BC. He grew up in his families Dairy Queen slinging burgers and ice cream. After attending Camosun College in Victoria he graduated with a Hotel & Restaurant Management Diploma. Working for Fairmont Hotels & Resorts across Canada for 7 years took him from the Banquet Rooms at the Algonquin in St. Andrews, New Brunswick to the kitchen in Mt. Tremblant, Quebec to Managing The Wildflower and Wine Room Restaurants at the Chateau Whistler. While in Whistler he fell in love with wine and became a Sommelier through the International Sommelier Guild. Now in Las Vegas, after a short stint as F&B Manager at the Ritz Carlton Hotel he made the move to L'Atelier de Joel Robuchon as AGM/Sommelier and finally Wine Director of Joel Robuchon Restaurants, Las Vegas at the MGM Grand Hotel & Casino.

Hello and Happy Holiday’s fromLas Vegas!

Working in a high-end fine dining restaurant has some great perks, one of them for me is being able to taste some of the most expensive wines on earth. My wine list is extensive with wines ranging from $35 a bottle all the way up to $30000 a bottle. This top number can be very intimidating of course.

At first glimpse of the wine list here at Joel Robuchon many people only see the 4 and 5 digit wines. I have upwards of 1700 selections on the list presently and only 377 of those wines are over $1000 a bottle, compared to 459 wines under $100 per bottle.

Why do I mention this? To show that even in one of the most expensive restaurants in North America there are wines available at all price points and for anyone’s budget.

Here are a few helpful tips to make your next dining experience even better (maybe even a little less stressful as well!)

  1. Utilize your favorite restaurants sommelier or the server to help you find that perfect bottle for you.
  2. Never be afraid to ask for help as more than likely there is someone there that knows the wine list better than yourself
  3. Try something different, if your favorite wine is out of reach try something you have never had before
  4. Don’t be intimidated by the giant wine list with the very expensive wines as there is always a bottle or 2 that you can afford, of course if you want to spend your savings on a bottle or 2 we can help you with that as well!
